On the way home from a trip to the park, that R.E.M. Andy Kaufman song, Man on the Moon, came on and I just love it so much that when I got home I decided to whip up some Elvis inspired scones.  Elvis?  Andy Kaufman?  If you’re missing the connection listen to the song, it’ll all come back to you!

These Peanut Butter and Banana Scones have managed to become my new favorite.  There’s something about the smell of PB melting in the oven that warms my home as much as any cinnamon scented candle.  Hope your family enjoys them as much as we do! 
Ingredients
  • 3 cups of flour
  • 1/2 cup of sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 6 Tbsp of butter
  • 1 cup of vanilla flavored yogurt
  • 1/2 cup of peanut butter
  • 1 banana cut up into small pieces
Directions

Preheat over to 400 degrees and spray a cookie sheet.

Mix all dry ingredients together, cut in the butter, and then cut in the peanut butter.  Add the yogurt and bananas.  The mixture will be a little crumbly, so I usually end up turning it out onto the counter and kneading it just until everything holds together.  Shape it into a circle, I’ve tried squares but then the kids asks me what’s wrong with them, and cut into wedges.  I can usually get about 10 wedges out of it.

Bake for 18-20 minutes.  Cool on a rack.  Slather with a little bit of butter and enjoy!
