Chocolate Chip & Sweet Potato Scones

So, how do you like the new logo and header?  I know, I know, it’s still a little blurry, off centered, and God bless me, I went and absent-mindedly changed the template so now I have these darn borders that I don’t remember how I got rid of the first time.  Any suggestions?

Well, after messing with pictures, codes, and layouts I was in desperate need of something made with all-purpose flour.  I tried to make cottage cheese cookies.  They weren’t bad but I want to tweak the recipe a bit before I share it here.  So, what else is a girl to do but go to her old standby and for me, that’s scones.

This time I wanted to incorporate leftover sweet potatoes and I gotta say, the results are delectable!

Chocolate Chip & Sweet Potato Scones

Sweet Potato Scone Recipe

Ingredients

  • 3 cups of flour
  • 1/2 cup brown sugar
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 6 Tbsp butter
  • 1 cup mashed sweet potatoes (plain with no butter or sugar of any kind added)
  • 1/2 cup vanilla yogurt
  • 1 cup dark chocolate chips

Directions

Preheat oven to 400 degrees.  Spray a cookie sheet and set aside.  Mix all dry ingredients, cut in the butter, add the sweet potatoes and yougurt, and finally add the chips.  If the mixture is dry and crumbly, turn it out onto the counter and knead it just a bit to get everything combined.  Shape it into a large rectangle, cut it pieces, place on the sheet, and bake for 18 minutes.  Let cool on a wire rack.

    These look great, and I must try them. I love pumpkin and chocolate chips. And I love sweet potato. So I'm positive I'll love sweet potato and chocolate chips!
