Little Drops of Spring - Eggless, Lemon, White Chocolate Chip Cookies


I wish I could say that I’ve gone on a good-for-you, low cholesterol diet that restricts my egg consumption, but yeah, no.  I was out of eggs and craving a citrusy sweet treat, so I threw together these lemonade-like cookies!

Little Drops of Spring – Eggless, Lemon, White Chocolate Chip Cookies

  • 1 cup of unsalted butter
  • 1 1/2 cups sugar
  • 3 cups of flour
  • 1 tsp. cream of tartar
  • 1 tsp. baking soda
  • 1/4 cup of lemon juice
  • 1/4 cup of milk
  • zest of two small lemons
  • 1/2 cup of white chocolate chips
Preheat your oven to 400 degrees.  Cream the butter and sugar until its nice and fluffy.  Add in 1 cup of the flour, cream of tartar, and baking soda before adding lemon juice.  Add remaining flour and zest before slowly adding in the milk.  Finally mix in the white chocolate chips.  Drop by tablespoonful onto ungreased cookie sheet and bake for 12-15 minutes.


****Update**** Since a couple of you asked I highlighted when to add the milk.  You alternate with the dry ingredients and the lemon juice and milk.  :)
