Almond Snickerdoodles

I know this is going to come as a shock but I haven’t made snickerdoodles in over 10 years. Maybe I made one patch too many as a teenager. Maybe I just don’t like the sugary crumbs I get on my hands when I eat them. Who knows why…I just haven’t made them. That is until last weekend, the kids wanted cookies and I really didn’t feel like the usual chocolate chip. Hmm, why not make snickerdoodles? Of course when I started to gather ingredients I was out of vanilla but did have almond extract so I improvised.

  • 1 cup butter
  • 2 cups of flour
  • 1 cup of almond flour
  • 1 1/2 cups sugar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp almond extract
  • 2 eggs
  • 2 Tbsp of each-sugar & almond flour
  • 1/2 tsp cinnamon
Preheat over to 375 degrees. Beat butter until smooth, about 30 seconds. Add almond flour, sugar, baking soda, baking powder, and eggs. Once it’s combined slowly add remaining flour. Cover and chill for at least 30 minutes.

Mix together the sugar, almond flour, and cinnamon in a bowl and set aside. Shape dough into 1 1/2 inch balls and then roll in sugar mixture. Place them on an ungreased cookie sheet about 2 inches apart. Bake for 10-12 minutes, cool on rack. Makes about 40 cookies.

Once the dough had chilled I had the kids help out with shaping it into balls and rolling them in the mixture. And since I had to pulverize a few handfuls of almonds to make the flour I also got creative and decorated the cookies with whole almonds. The kids loved the cookies and since they got to help make them, I’m sure we’re going to be putting them back into our cookie rotation. I hope you enjoy them too!
