The Easiest Tortilla Soup Recipe EVER

So a couple of days ago I couldn’t decide what to make for dinner. We’d had Mexican the night before and there were plenty of leftovers in the house so I decided I’d give tortilla soup a try. I was surprised at exactly how easy and good it was and had to share!

  • taco-seasoned ground beef (maybe a pound, remember I was working w/leftovers)
  • 1 1/2 cup of frozen corn
  • 32 oz. container of chicken stock
  • 24 oz. jar of your favorite salsa
  • 4 flour tortilla shells
  • canola oil
Start off by cutting the tortilla shells into strips, fry in the canola oil, and drain. Now that the hard part is over, throw the rest of the ingredients into a pot and bring to a boil. Serve with your super crunchy, homemade tortilla chips, sour cream (or ranch dressing, don’t judge), shredded cheese and lettuce. Enjoy!
