

So a couple of days ago I couldn’t decide what to make for dinner. We’d had Mexican the night before and there were plenty of leftovers in the house so I decided I’d give tortilla soup a try. I was surprised at exactly how easy and good it was and had to share!
Ingredients
- taco-seasoned ground beef (maybe a pound, remember I was working w/leftovers)
- 1 1/2 cup of frozen corn
- 32 oz. container of chicken stock
- 24 oz. jar of your favorite salsa
- 4 flour tortilla shells
- canola oil
