Apple and Brie Turnovers

Last night we had some friends over and in my drug-induced mania I played supreme hostess and made these apple and brie turnovers.  Isn’t it funny how it only takes adding the name of a ‘fancy’ ingredient to make something sound like it’s really special?  Anyhow, here’s the quick recipe with a note on how to make yours even better.
Apple and Brie Turnovers
  • 5-7 small Granny Smith apples (or any other baking apples of your choice)
  • 3 Tbsp of lemon juice ( I like to use Real Lemon)
  • 2 Tbsp of sugar
  • 1 tsp cinnamon
  • 1 Tbsp of flour
  • 1 box of Puff Pastry (Sure you can make it if you want, but Pepperidge Farm makes a mean box of the stuff.)
  • 1 8 oz. wheel of brie
Makes 12 turnovers.

Directions

Preheat the over to 400 degrees and spray a large cookie sheet. And now for the time-consuming step of this recipe.

Peel, core, and slice up the apples.  While you’re doing this, put your apples in a big bowl with the lemon juice and give them a toss now and then to keep them from going brown.

After the apples are all cut up and beautiful, mix in the sugar, cinnamon, and flour.

Unfold the puff pastry onto a lightly floured surface and roll it out just a little bit more.  I like to do this to get rid of any perforations in it.  Cut the pastry into six equal pieces (not shown).

Take each piece and work it out with your hands just a little bit more.

Place a slice of the cheese in the middle of the pastry and cover with the apple mixture.  Fold the dough over the apples and cheese and pinch closed.

Be sure to really stuff the mixture in there.  Mine were good but after the apples baked down and cooled they looked like hollowed out turnovers.022

Place the turnovers onto the baking sheet and bake for 20-30 minutes.  I know that sounds like an odd time span but hear me out.  The first picture below is what they looked like after 15 minutes.  The second was at 30 minutes.  (I need a new oven, yours might work just fine.)

I ran out of time before our guests came over but I would recommend throwing together a nice glaze, such as this lovely cinnamon variety.

The only thing better than making them myself, would be if YOU arrived at my doorstep with all the work done, and handed them to me! ;) Love how brave you are in the kitchen (I love pastry, but never make things with it.
